A family-favorite way to start your day! We love this versatile dish, whether at breakfast time or dinner. It reheats well, so you can make it and enjoy leftovers throughout the week.

Ingredients:
- 8 frozen hash brown patties
- 3 cups shredded cheddar cheese
- 1 pound of meat of choice, such as diced ham or cooked & crumbled sausage or bacon
- 7 eggs
- 1 cup milk
- 1/2 tsp salt
- 1/2 tsp ground mustard
- 1/4 tsp black pepper
Directions:
1. Preheat oven to 350F.
2. In a 9 x 13 in. pan, cover the bottom with a single layer of hash brown patties. Sprinkle with cheese and meat of choice.
3. In a large bowl, beat eggs, milk, salt, mustard, and pepper together. Pour over meat and cheese.
4. Cover with aluminum foil and bake for 1 hour. After 1 hour, uncover and bake for 15 more minutes or until the edges are golden brown and a knife inserted near the center comes out clean.
Note: this can also be made without meat and still tastes great!
