Wake Up Casserole

I first made this dish probably about 15 years ago and it's been made countless times since. We love this versatile dish, whether at breakfast time, lunch, or dinner. It reheats well, so you can make it and enjoy leftovers throughout the week. It can be prepped and covered with foil the night before and pulled out of the refrigerator to bake in the morning (I especially love doing this on special mornings, like Christmas!)
Ingredients:
- 9 frozen hash brown patties
- 3 cups shredded cheddar cheese
- 1 pound of Becker Farms meat of choice, such as diced ham or cooked & crumbled sausage or bacon
- 7 Becker Farms eggs
- 1 cup milk
- 1/2 tsp kosher salt
- 1/2 tsp ground mustard
- 1/4 tsp freshly ground black pepper
Directions:
1. Preheat oven to 350F.
2. Lightly coat the bottom a 9 x 13 baking dish with cooking spray, then arrange the hash brown patties in a single layer to cover the bottom of the dish (depending on your dish, you may need to overlap the patties slightly to make them fit). Next, add the cooked meat of choice to cover the hash brown patties.
3. In a large bowl, whisk together the eggs, milk, salt, mustard, and pepper together. Pour this mixture over the meat, cheese, and hashbrowns. Then, top with the shredded cheese.
4. Cover with aluminum foil and bake for 1 hour. After 1 hour, uncover and bake for around 10 more minutes or until the edges are golden brown and a knife inserted near the center comes out clean. I like to serve this with a side of toast with butter and jam and fresh fruit.
Notes: This can also be made without meat and still tastes great. For a little pop of flavor, consider topping each serving with a spoonful of salsa.
