This recipe was shared by our awesome customer, Aileen and it comes from the Cooking Light Gluten Free cookbook. She commented that "All the family loved it!" Ingredients
1 tbsp brown sugar
1 1/2 tsp paprika
1 tsp garlic powder
2 tsp instant coffee granules or 1 tsp instant espresso granules
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp coarsely ground black pepper
1 1-lb pork tenderloin
Cooking spray
1 tsp olive oil
1/2 c water
Directions
1. Preheat oven to 425F.
2. Combine first 7 ingredients. Rub sugar mixture over pork. Cover and stand for 15 minutes.
3. Heat large oven-safe skillet over medium-high heat. Coat pan with spray. Heat oil in pan. Add pork; cook 2 minutes each side or until browned.
Bake at 425F for 20 minutes.
4. Remove pork from pan, reserve drippings in pan. Cover pork and let stand for 5 minutes. Stir 1/2 c water into drippings. Drizzle sauce over pork.
