Butter for Steaks (and beyond)

Many would agree with the expression 'bacon makes everything better' and I would offer that butter is in that same magical category--it makes popcorn, baked potatoes, corn on the cob, banana bread (well, make that any kind of bread), and so many other dishes even more delicious!  So, if you want to elevate your Steak Game this week, whip up a batch of this butter and instantly feel like you are dining at a fancy steakhouse (for a fraction of the price).  It is also quite delicious on fish, bread, roasted or steamed vegetables, potatoes, and beyond!  

Ingredients

  • 1 stick of quality butter, softened (I use salted, but unsalted will work just fine)
  • 1 clove fresh garlic, finely minced or smashed with a garlic press
  • 1 TBSP fresh parsley, finely minced
  • 1 TBSP fresh thyme, finely minced
  • ~1/8 to 1/4 tsp kosher salt 
  • 1/8 tsp freshly ground black pepper
  • Zest of 1 lemon, around 1 tsp (or 1/2 tsp lemon pepper)

Directions 

  1. In a small bowl, combine all of the ingredients and mix with a spoon or rubber spatula until well-blended and smooth.
  2. If desired, shape the prepared butter into a log on a piece of parchment paper or plastic wrap, close/twist the ends and refrigerate until firm (so that it can be sliced).  Otherwise, store in a small bowl with airtight lid (for up to 1-2 weeks in the refrigerator).
  3. When ready to use, add a smear (or slice) to grilled steaks (or whatever else you plan to use it with). Enjoy!

Note: As an alternative to Step 1, if you have a mini food processor, you can avoid all of the mincing and just toss everything in the bowl of the processor and blend until smooth (using a regular-sized food processor will not work well, unless you double the batch).  Also, other fresh herbs (such as rosemary, chives, dill, oregano, etc.) would also be wonderful in this butter, so get creative and use what quantities and combinations you like best!
