Sometimes, simple is best. Especially when it involves dinner preparation and you have a busy schedule. This dish is a favorite around our home and despite the short list of ingredients, it can be quite versatile with the type of pork chosen–some folks prefer ham, others pork chops, and others smoked sausage. The bottom line is, however you make it, you can’t go wrong. We introduced this dish to Steven (our non-Hoosier intern) this summer and he seemed to like it.
- Green beans*, washed and trimmed
- Potatoes*, washed and either quartered (depending on the size) or cubed/cut as desired
- Your choice of pork–we almost always use smoked pork chops*
- Salt and pepper
- 1 onion, diced (optional, but oh-so-yummy!)
*I have never measured the ingredients used in this dish; I simply eyeball it so that the distribution of potatoes and green beans seems adequate for the amount of meat. I typically add 4 smoked pork chops and around 3 cups each of potatoes and green beans.
- Fill crock pot around 1/4 full with water; turn to high. Add meat, potatoes, green beans, and onion (if adding). If necessary, add a little more water.
- Allow to cook on high for around 4 hours, or
until potatoes are tender. Using tongs, take the meat out of the crock pot and separate the meat from the fat and bones. Add the meat back to the crockpot with the potatoes and green beans (or a serving dish, if you are ready to eat).
- Season with salt and pepper.
