Have lots of chicken stock on your hands but not in the mood for soup? Try making enchiladas with your own homemade sauce!

  • 3 TBSP vegetable oil (canola or olive oil would work too)
  • 1 TBSP flour
  • 1/4 chili powder
  • 2 cups chicken stock
  • 10 oz. tomato paste
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp salt


1. In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute.
2. Add chili powder and cook for 30 seconds.
3. Add stock, tomato paste, oregano, and cumin and stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings as needed. Serve atop your favorite enchiladas.
