Last Saturday, I had the pleasure of preparing a variety of freezer meals for Kyle’s grandparents in one of my friend’s ‘power cooking’ classes (learn more at Eat Cheap! with Trista Hill).  When prepping the meat that I needed for the class, I inadvertently pulled a few too many packages of steaks from the freezer, so that (conveniently) will be our dinner later this evening.  Below is a simple marinade recipe that goes especially well with beef, but would also be delicious on chicken. 

Ingredients: Yield: ~3/4 c, which would be sufficient for ~2 lbs of meat
1/3 c soy sauce
1 clove minced garlic
1/2 TBSP fresh ginger (peeled and finely chopped)
1/8 c firmly-packed brown sugar
1/8 c rice wine vinegar
1/8 c canola oil
1/8 c orange juice

Directions:

  1. Combine all ingredients in a small mixing bowl; whisk together until well-blended.
  2. Pour over meat, cover (or transfer to a Ziplock-style bag) and allow to marinate in the refrigerator for 8 to 36 hours (beef) or 1 to 8 hours (chicken).
