Overwhelmed with all that leftover ham? Here’s a great recipe to help jump start your day and whittle away at that ham.

  • 2 cups flour
  • 1 TBSP baking powder
  • 1 tsp salt
  • Black pepper to taste
  • 1 cup milk
  • 2 eggs
  • 1/4 vegetable oil (or canola)
  • 1 cup ham, diced
  • 1 cup cheddar cheese, shredded (Swiss works well too)
  • 3/4 cup scallions, diced


1. Preheat oven to 350ºF.
2. Grease a standard muffin pan with butter or non-stick cooking spray.
3. In a large mixing bowl, combine flour, baking powder, salt and black pepper.
4. Add milk, eggs and vegetable oil. Mix just until combined.
5. Add ham, cheese and scallions. Mix just until combined. Do not over stir.
6. Scoop into muffin cups to ¾ full. There is enough batter to fill one dozen muffin wells.
7. Bake at 350ºF for 30 minutes or until a toothpick inserted comes out clean.

(Special Note: I didn’t have scallions on hand when I made these and they were still tasty. Also, if you really like cheese, you can add extra like I did. ~Amelia)
